How a Lava Rock Grill works

It consists of two burners that heat a stone, which then supplies its heat to the food.
However, this system has difficulty in delivering that “lovely red hot ember colour”.

What’s more, the rock has to accumulate a lot of heat before it transfers it to the food; this means times are very slow, and effectiveness and thermal efficiency are continually lost,since it is impossible to keep the temperature constant.
And since the burner is underneath the meat, the dripping fat and liquids will create a a great deal of smoke and smells and also make cleaning the lava rock more problematical.

How a griddle works

A griddle is a traditional frying plate.
It is a large metal plate, used in the Anglo-Saxon world for frying: basically, for frying eggs and bacon.

IA professional griddle has a burner that heats a plate, just as in a domestic griddle.
The problem is that the griddle heats up and cooks the first steak, but then it cools down. Inevitably, the juices leak from the meat, because the lower temperature is unable to caramelisethem at once, so the liquids are not sealed in and the result is of poorer quality.
